Vineyard Information

This elegant Cabernet Sauvignon comes from grapes that were grown in our estate vineyards in the cool-climate Orange region of New South Wales, Australia. Our vineyards lie at the base of Mount Canobolas, an extinct volcano, which provides rich basalt loam and limestone soils ideal for balanced vine growth. The vineyards enjoyed outstanding conditions over the 2002 vintage and growing season. Rainfall was below average, and the vineyards received some late frosts. Summer was warm and dry requiring close monitering of soil moisture levels. This weather pattern continued into Autumn until light rains brought relief to the vineyards. Vintage began in the third week of February with excellent fruit flavors on the vine.

Winemaking

After harvesting and crushing, the grapes were cold soaked for two days to maximize color extraction. The must was then inoculated with a red wine yeast designed to enhance color and mouthfeel. During fermentation, maximum color, flavor and tannin were extracted by utilizing daily rack and return procedures. After 18 days, the fermentation completed, and the wine was transferred to French oak barriques, where it aged six months prior to bottling.
